Our Favorite Holiday Meals

Creamy Butternut Squash Apple Soup
It's my favorite soup. Check out this recipe,
Here is my version (much simpler and tastes great!!)
  • Slice butternut squash (or sweet potatoes), apples, carrots, and onion in chunks
  • Add water just to cover
  • Add your favorite spices
  • Cook until done
  • Add any mild miso (to taste) and cook for a few more minutes
  • Add lemon juice (to taste)
  • Blend it all together, serve, garnish with minced parsley or croutons.
Seafood Paella
Love this dish. Check out this recipe,
Here is my version (easier and tastes good!!)
  • A package of frozen seafood from Trader's Joe
  • Thaw and fry it in olive oil with vegetables (sliced onion, tomatoes, green beans (or asparagus)
  • Add garlic, paprika, and your favorite spices
  • Cook rice separately (white, or saffron, or Spanish, or basmati, or brown)
  • Mix all together, add minced parsley and lemon juice to taste
